Tex-Mex Ribs with Avocado Lime Cream

This recipe set out to capture the bold, hearty flavors of Tex-Mex cuisine in a rib dish. With a smoky rub on the ribs and a smooth, citrusy avocado lime cream to balance out the flavors, this recipe is a celebration of the vibrant fusion that is Tex-Mex.

Ingredients:

  • 2 racks of baby back ribs

  • 1 cup of your favorite Tex-Mex spice rub (containing ingredients such as smoked paprika, cumin, chili powder, garlic powder, etc.)

  • 2 ripe avocados

  • Juice of 2 limes

  • Salt to taste

Preparation Steps:

  1. Preheat your oven to 275°F (135°C).

  2. Clean the ribs and pat dry. Season both sides with salt.

  3. Rub the Tex-Mex spice mix evenly onto the ribs, ensuring they are fully coated. Let the ribs marinate for at least 2 hours, but overnight is best for deeper flavors.

  4. Arrange the ribs on a baking tray lined with foil, bone side down. Cover the tray tightly with another piece of foil.
