Scrambled Eggs Without Eggs - A Vegan Recipe

Scrambled Eggs Made with Tofu

Once upon a time, there was an ancient city where the sun always shone and the trees were always in bloom. The city was known for its bountiful orchards and vineyards, and the people who lived there were renowned for their culinary creativity. It was in this city that the tradition of preparing meals without using what was expected began. For example, they would make salads without lettuce, pasta without wheat, and in this case, scrambled eggs without eggs. It was a celebration of unexpected ingredients and culinary innovation. And so, this recipe was born, inspired by the inventive spirit of that ancient city.

Ingredient List:

  • 200g firm tofu, drained and crumbled

  • 2 tbsp olive oil

  • 1/4 tsp turmeric

  • 1/4 tsp black salt (Kala Namak)

  • 1/4 cup nutritional yeast

  • 1/2 red bell pepper, finely chopped

  • 2 green onions, chopped

  • 1/2 cup cherry tomatoes, halved

  • 1/2 tsp paprika

  • Salt and pepper to taste

  • Fresh parsley for garnish

Preparation Steps:

  1. Heat the olive oil in a non-stick pan over medium heat.

  2. Add the crumbled tofu and cook for about 5 minutes until it starts to turn golden.

  3. Stir in the turmeric and black salt. The black salt gives a sulfurous, egg-like taste, while the turmeric adds a vibrant, egg-yolk color.

  4. Add the nutritional yeast and stir well to combine. This adds a depth of flavor and a hint of creaminess.

  5. Throw in the chopped red bell pepper and green onions, and cook for another 5 minutes.

  6. Add the cherry tomatoes and sprinkle over the paprika, then season with salt and pepper. Cook for another 5 minutes, until the tomatoes start to soften.

  7. Transfer your egg-less scramble to plates, garnish with fresh parsley, and serve hot.

Drink Pairing: Serve with freshly squeezed orange juice or a glass of white wine like a crisp Sauvignon Blanc for a brunch treat.

Chef's Tips:

  • Black salt (Kala Namak) and nutritional yeast are key to this recipe, as they mimic the flavor of traditional scrambled eggs. If you can't find these ingredients in your local supermarket, try a health food or specialty store.

  • Feel free to experiment with different veggies or spices in this scramble. A touch of smoked paprika or a sprinkle of chili flakes could add an extra kick!

  • To further mimic a traditional egg scramble, consider adding a dairy-free cheese just before the scramble is finished cooking.
